Also, I can relate to what you wrote about "equilibrium". :) I think, after several years of eating such food (those you mentioned plus lentils and beans as my main protein source) on an almost daily basis, I had gotten used to it and no longer felt much discomfort. I actually get more discomfort now from consuming more dairy products than usual, compared to beans and veggies. I did read that certain spices and sea vegetables help make food more digestible - for example when I cook beans (especially starting from dry beans) I put in a dried bay leaf or a small piece of kombu (dried sea vegetable, you can find it at Whole Foods or health food stores) into the cooking water. I like these 2 options because it does not significantly alter the taste of what I am cooking. I'm not sure if you like Indian or Mexican food, but spices such as cumin also help with digestion - which makes sense because those cuisines to have bean-based dishes. Cardamom, coriander, and fennel seeds in Indian cuisine are also supposedly digestive spices. (learning from my Indian husband :)) After a fiber-rich or bean-based meal (or any meal for that matter), I also like taking ginger tea afterwards - just a few slices of fresh ginger simmered in water, then with a little lemon and honey stirred in. I think it does soothe my belly.
